Long before it was a product on a shelf, ghee was part of the daily routine in Indian homes. Much of that comes from Ayurveda, which has treasured desi cow ghee for centuries.
A daily rasayana
In Ayurveda, a rasayana is something taken regularly as part of a nourishing routine. Desi cow ghee has long been counted among them, which is why it is eaten a little every day instead of kept for special occasions.
Agni, the digestive fire
Ayurveda describes digestion as a fire, called agni. Ghee is traditionally used to kindle it, which is one reason a meal so often begins with ghee on hot rice or a roti.
How it is traditionally taken
- A spoonful with meals
- On hot rice, rotis and dal
- In sweets offered on festive days
