Ask ten families how they use ghee and you will hear ten small rituals. None of them is written down. They are simply how things are done at home.
Morning
The first roti or paratha of the day gets a brush of ghee while it is still hot. In many homes this is the smell of breakfast.
Midday
Dal is finished with a tadka in ghee, and a spoonful goes over the rice. A meal is not counted as served until the ghee has been offered.
Evening
At dusk a diya is lit, often with ghee. The same jar that feeds the family also lights the lamp.
In our house nobody measured ghee. You were asked once, and then you were given a little more.
Special days
On festivals and good news, the first sweet is made in ghee and offered before anyone eats.
