Every festival kitchen runs on ghee. If you have ever run out halfway through the laddoos, you know it pays to plan ahead.

Where the ghee goes

  • Sweets: laddoos, halwa and barfi
  • Frying puris and parathas
  • The tadka for dal and sabzi
  • The spoonful on hot rice and rotis

Plan by the dish

Write down what you are cooking and add up the ghee each recipe needs. Sweets take the most, so start there, and keep a little extra for serving.
