A2 Ghee Explained: What the Name Really Means

A2 appears on many jars of ghee, often with no explanation. It is not a grade and it is not a brand. It describes the milk the ghee is made from.

A2 is about the milk

Milk contains a protein called beta-casein, which comes in more than one form. The two best known are called A1 and A2. Milk that carries only the A2 form is known as A2 milk, and ghee made from it is called A2 ghee.

Where A2 milk comes from

Native Indian cow breeds, often called desi cows, are known for A2 milk. The Gir is one of the best known of them.

What to look for on a label

  • The source: milk from native desi cows
  • The method: churned from curd, or made from cream
  • What is added: good ghee has nothing added and nothing removed
  • Testing: whether every batch is lab-tested

Does it taste different?
