Cow Ghee or Buffalo Ghee: Which One Belongs in Your Kitchen?

It is one of the most common questions about ghee. The honest answer is that neither is better. They are different, and most kitchens have a use for both.

How they look and feel

Cow ghee is usually a deeper golden yellow and feels light on the tongue. Buffalo ghee tends to be paler and feels richer and fuller, because buffalo milk carries more fat.

Which should you buy?

  • For everyday meals, start with cow ghee
  • For halwa, laddoos and frying puris, buffalo ghee gives a fuller taste
  • If you cook a lot, keep a jar of each

Whichever you choose, look for the same things: made the slow, traditional way, in small batches, with nothing added.
