It is one of the most common questions about ghee. The honest answer is that neither is better. They are different, and most kitchens have a use for both.
How they look and feel
Cow ghee is usually a deeper golden yellow and feels light on the tongue. Buffalo ghee tends to be paler and feels richer and fuller, because buffalo milk carries more fat.
